Coconut Chocolate Chip Blueberry Baked Oatmeal Bars

This Gluten and Dairy Free recipe is the perfect treat for a sweet tooth without feeling guilty whatsoever!

Ingredients

  • 3 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt to taste
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp RYP Berry Delicious Organic Blueberry Powder
  • 3 eggs
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut oil
  • 1 cup almond milk
  • 1 tsp vanilla
  • 1/3 cup unsweetened shredded coconut
  • dark chocolate chips to top

Directions

  1. Line a 9x9 baking dish with parchment paper
  2. Mix dry ingredients (rolled oats, baking powder, salt, cinnamon, nutmeg, RYP Berry Delicious Powder, unsweetened shredded coconut)
  3. Mix wet ingredients (pure maple syrup, coconut oil, almond milk, vanilla)
  4. Add wet to dry ingredients until combined, pour into baking dish and top with chocolate chips, let set for an hour or two
