Veggie Tots

A great healthy snack option for if you picky eaters in the family. This recipe is a kids favourite with a dipping sauce, nutritious and delicious.

Broccoli Cheddar Veggie Tots

Ingredients

  • 2 cups "Riced" Cauliflower
  • 1/2 cup Almond Flour or Bread Crumbs
  • 1 cup shredded Cheddar Chese
  • 1 egg
  • 1 tbsp RYP Broccoli Powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt

Beet Veggie Tots

Ingredients

  • 2 cups "Riced" Cauliflower
  • 1/2 cup Almond Flour or Bread Crumbs
  • 1 egg
  • 1 tbsp RYP Beet Powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt

Directions

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper
  2. Process Cauliflower in a Food Processor until "Riced" you can also grate or chop the cauliflower to achieve the same result
  1. Microwave "Riced" Cauliflower on high for 4-5 minutes
  2. Add Almond Flour, Cheese, Egg, Garlic Powder, Onion Powder, RYP Powder and salt and mix ingredients together until combined
  3. Use your hands to form "tot" shaped pieces and place them on a baking sheet
  4. Bake for 22-24 minutes flipping the tots half way through baking
  5. Serve warm with your favourite dipping sauce

Tried out this recipe. Definitely too much salt for my tastes. Will cut by at least half next time.
