Beet Cauliflower Gnocchi

Our RYP Beet Powder is an easy nutritious addition to your next cauliflower creation. This was a recipe from Trader Joe's and it tastes way better than it looks.


  • 2 tbsp RYP Beet Powder
  • 1 head of Cauliflower chopped into florets (about 4 cups)
  • 1/4 cup Tapioca Flour
  • 1/4 cup Potato Starch
  • 1 tsp Salt
  • 1 tbsp Olive Oil


  • Steam cauliflower florets in a steam basket, cover for 10-15 minutes or until fork tender and set aside until cool enough to handle
  • Place cauliflower in clean dish towel over a bowl to remove excess water
  • Place strained cauliflower into food processor and pulse until finely ground into rice and pour back into bowl
  • Add RYP Beet Powder, Tapioca Flour, Potato Starch and Salt stirring with a wooden spoon to combine then add in the olive oil, stir until mixture comes together to form a ball
  • Take about a tsp of mixture and form it into a gnocchi shape
  • Pan fry the Gnocchi with a bit of olive oil until you see the mixture start to crisp around the edges
