Beet Cauliflower Gnocchi
Our RYP Beet Powder is an easy nutritious addition to your next cauliflower creation. This was a recipe from Trader Joe's and it tastes way better than it looks.
Ingredients
- 2 tbsp RYP Beet Powder
- 1 head of Cauliflower chopped into florets (about 4 cups)
- 1/4 cup Tapioca Flour
- 1/4 cup Potato Starch
- 1 tsp Salt
- 1 tbsp Olive Oil
Directions
- Steam cauliflower florets in a steam basket, cover for 10-15 minutes or until fork tender and set aside until cool enough to handle
- Place cauliflower in clean dish towel over a bowl to remove excess water
- Place strained cauliflower into food processor and pulse until finely ground into rice and pour back into bowl
- Add RYP Beet Powder, Tapioca Flour, Potato Starch and Salt stirring with a wooden spoon to combine then add in the olive oil, stir until mixture comes together to form a ball
- Take about a tsp of mixture and form it into a gnocchi shape
- Pan fry the Gnocchi with a bit of olive oil until you see the mixture start to crisp around the edges
