RYP Fruity Chocolate Coconut Cookies

A simple ingredient and delicious start to your day recipe :) Such a quick and easy meal prep idea to have as a grab and go snack if you're running out the door... Or since we never leave the house these days just to enjoy with a cup of coffee!

Ingredients

  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 4 tbsp RYP Blend It Up ~ Organic Fruit Blend
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2 tbsp pumpkin seeds or hemp hearts
  • 1 tbsp chia seeds
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chocolate chips

Directions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper
  2. Beat together the almond butter, syrup, flax egg until smooth & creamy
  3. Beat in the RYP Fruit Blend, baking soda and sea salt
  4. Fold in the coconut, chocolate chips, chia and pumpkin seeds
  5. Scoop one tbsp of dough onto baking sheet and gently flatten, repeat until all dough is used.
  6. Bake for 13-14 minutes until golden brown, cook on sheet for 5 mins then transfer to a wire rack to finish cooling... enjoy :)
