Healthy Baked Oatmeal Cups

A great healthy grab and go breakfast if you're in a rush!

Ingredients

Blackberry Almond

    • 2 tbsp Berry Special Blackberry Powder
    • 1 cup old fashioned oats
    • 1/2 tsp cinnamon
    • 1/4 tsp baking powder
    • pinch of salt
    • 1/2 cup unsweetened almond milk
    • 1 tbsp coconut sugar or brown sugar
    • 1/2 tsp vanilla extract
    • 1 tbsp pure maple syrup or to taste

Cranberry Orange

    • 2 tbsp Oh Cranada Cranberry Powder
    • 1 cup old fashioned oats
    • 1/2 tsp cinnamon
    • 1/4 tsp baking powder
    • pinch of salt
    • 1/2 cup unsweetened almond milk
    • 1 tbsp coconut sugar or brown sugar
    • 1/2 tsp vanilla extract
    • 1 tbsp pure maple syrup or to taste

Sweet Potato & Carrot

    • 1 tbsp Keep Calm and Carrot On Carrot Powder
    • 1 tbsp I Yam who I Yam Sweet Potato Powder
    • 1 cup old fashioned oats
    • 1/2 tsp cinnamon
    • 1/4 tsp baking powder
    • pinch of salt
    • 1/2 cup unsweetened almond milk
    • 1 tbsp coconut sugar or brown sugar
    • 1/2 tsp vanilla extract
    • 1 tbsp pure maple syrup or to taste

Apple Cinnamon

    • 2 tbsp An Apple A Day Apple Powder
    • 1 cup old fashioned oats
    • 1/2 tsp cinnamon
    • 1/4 tsp baking powder
    • pinch of salt
    • 1/2 cup unsweetened almond milk
    • 1 tbsp coconut sugar or brown sugar
    • 1/2 tsp vanilla extract
    • 1 tbsp pure maple syrup or to taste

Directions

  1. Preheat oven to 375 degrees F add ingredients of choice and mix well until everything is combined.
  2. Spray a muffin tin with cooking spray or use reusable silicone muffin cups to save the cleaning mess. Scoop oatmeal mixture to the top of each muffin cup, the ingredients will be a bit watery to make sure to stir before scooping each time. 
  3. Bake Oatmeal Cups for about 20 minutes or until cooked through.
